The broth is made from pork with various ingredients such as crabs, vegetables, spring rolls, or piper lolot-wrapped meatballs. The components may vary, but each bowl should include a portion of locally produced rice noodles with a distinctive light red color. Red noodles are made from rice flour and pigmented a reddish brown from cane sugar or gac powder, depending on the recipe. Today, the city’s cuisine has become rich and varied with many strange and delicious dishes in addition to crab noodles, as there are various side ingredients to go with the red noodles like seafood, mantis shrimp, etc. Every visitor, when coming to Hai Phong City, should be unable to ignore this unique and well-known dish.
